Ana Paula do Espirito Santo is specialised in:

  • Formulation of social and eco-friendly foods.
  • Development and analysis of fermented probiotic dairy and non dairy beverages.
  • Functional food design.
  • Analysis of antioxidant activity, texture, fatty acids and phenolic compounds profiles of foods.

She is currently working at the Research & Development department of the French Food Tech start-up Atelier du Fruit.
